We know there has been a lot of cooking and baking underway when we were all at home and our valued sponsor Whitestone Cheese provided some delicious recipes we thought you might enjoy too!

Drunken Windsor Blue:


110g Windsor Blue wedge (as many as you like)

The Dubliner – Irish Whisky Liqueur, enough to cover cheese


Soak whole Windsor Blue wedge(s) overnight in a bowl of 'The Dubliner - Irish Whisky Liqueur' at constant temperature. Cover to keep it safe.

Finishing / serve with:

The result is an aromatic blue cheese with notes of honey and hints of caramel.

The alcohol evaporates quickly but the blue cheese will be ‘drunk’ and ready to be enjoyed at room temperature. The perfect dessert on its own or as part of a cheese board.

Marinated pan-fried Garlic Halloumi:


400g (2 packs) Ferry Road Halloumi cut into thick slices (approx. 2cm depth)

2 finely chopped cloves of garlic

2 Tbs chopped fresh basil (or pesto)

60g sliced sun-dried tomatoes

1 cup olive oil

Juice of 1 lime (for finishing)


Place ingredients apart into a shallow dish, cover and marinate overnight.

Pan fry the Halloumi slices until brown and crispy on the outside.

Finishing / serve with:

Arrange cooked Halloumi on fresh bread or green salad, spoon marinade on top and drizzle with lime juice to serve.


Baked Camembert:


150g Lindis Pass Camembert

1 Tbsp dry white wine

A sprig of thyme

Chilli flakes/cracked black pepper


Heat oven to 180°C

Unwrap camembert and place into a ceramic baker or small baking pot.

With a sharp knife, score the top of the cheese a few times. Top with dry white wine, thyme and a pinch of dried chilli flakes and/or cracked black pepper.

Place on tray and bake for 20 mins or until gooey.

Finishing / serve with:

Serve with toasted or rustic bread for dipping.

Cheese Rolls:


1 cup grated Aged Airedale cheese

1 can of reduced cream (240g)

1 x sachet Maggi Onion Soup Mix (30g)

1 x loaf of fresh sandwich slice white bread

Salted butter to garnish


Pre heat oven to 200°C

Combine all filling ingredients in a mixing bowl

Spread approximately 20g over white bread

Roll bread into a cheese roll

Roll with a rolling pin to seal.

Place in oven for 5-7 minutes until golden brown

Finishing / serve with:

Served toasted hot from the oven with lashings of fresh butter.
